Does anyone have a recipe for cookies...ive tried my english recipe and used the dutch flour but it doesnt work...so i think i need a full dutch recipe...i want light and crisp cookies...can anyone help please :)

Hello Jayne,

Maybe you can use mix for coockies from the supermarket?
Like "Koopmans koekjesmix".

Or do you want to bake them all by yourself?

My best friend's boyfriend lives in the UK, so she can bring back plain flour for me :)

I'm making bread as we speak; so I'm a bit busy, but before the end of the afternoon I'll have a Dutch recipe translated for you!

I think that the problem with your recipe is not the flour but the amount of egg. If you want to use this recipi, you should use an equal amount of sugar and butter and a double amount of flour and just 1 egg.

So:
7 oz sugar
7 oz butter
14 oz plain flour
1 teaspoon baking powder
1 egg

And make sure you use plain flower (tarwebloem or tarwe patentbloem)
It's a bit like this  Peggy Porschen recipi:

BASIC SUGAR COOKIES
Makes about 25 medium size cookies

200g unsalted soft butter
200g caster sugar
1 egg lightly beaten
400g plain flour, plus more for dusting

Optional flavours:
For vanilla cookies, add seeds from 1 vanilla pod
For lemon cookie, add finely grated zest of lemon
For orange cookie, add finely grated zest of orange
For chocolate cookie, replace 50g of the plain flour with 50g of cacao powder

Method:
1.With paddle attachment of electric mixer, cream the butter and sugar and choosen flavouring until well mixed and just creamy in the texture. Do not overwork, or the cookies will spread during baking.

2. Beat in the egg until well combined. Add the flour and mix on low speed until a dough forms. Gather into ball, wrap in cling film and chill for at least 1 hour.

3.Place the dough on floured surface and knead briefly. Using two ¼ inch (5mm) guide sticks, roll out to an even thickness.

4. Use cookie cutter to cut out shapes and using a palette knife, lay on a baking tray lined with greaseproof paper. Chill again for about 30 minutes, preheat the oven to 180 degress celcius, gas 4.

5. Bake for 8-12 minutes, depending on size, until golden brown at the edges. Let cool on wire rack.

Peggy Porschen cookies
7oz sugar
7oz butter (soft)

pinch of salt
Mix sugar and butter 5 mins until the crystals are less visable. add the egg mix well. Then the flour.  Wrap tight in plastic wrap and refridgerate at least 1 hour.
Roll cut out and bake 10 mins at 180C

Sugar cookies
16oz flour
7oz sugar
9oz butter (soft)
2 eggs
pinch of salt
1 tsp vanilla

Mix eggs sugar and vanilla.  Add butter flour and pinch of salt.  Mix just long enough for everything to blend. 
Wrap and refridgerate 1 hour.  Preheat oven to 170C Bake 17 mins

It is the flour as english plain flour and the eggs work perfectly....but i have noticed dutch flour isnt as absorbant as ours...so will try the recipe youve given.....

Yeah dutch flour is moister (is moister a word :S)  than english flour or even canadian flour.  Has to do with elevation and such.  Either way i hope your cookies work out.

I tried the mix and it wasnt workable, the mixture was very sticky and loose so in the bin it went

Whenever a recipe asks for flour I always use Patent flour :)

What flour do i use please....

To be honest i use the cheapest one you can buy at super de boer.

But which type, you have 2 types, a self raising and a tarwe bloem, which do i use for cookies

Self raising flour is to be used in (for example) sponge cakes or cupcakes; because they have to come up. Cookies have to stay flat (or at least in the shape you cut them in). If you use self raising flour for that, they'll look like little cakes, but I have no idea how they'll taste.
