Onderwerp: English Lemon Curd
50 grms butter
150grm feine sugar
zest and juice of 2 large lemons
3 eggs + 1 yolk
Makes 1 jar
Melt slowly, butter and sugar in a pan till sugar dissolves.
When melted add juice and zest of lemons
Stir till all mixed..then turn up heat slightly
Add beaten eggs and stir fast, really fast, when the edges of the curd start to bubble turn heat off but continue to stir fast for about a minute.
When cooled put in sterilised jar with a round of greaseproof paper touching the curd to stop a skin forming...keep in fridge
