Walnut cake    Recipe for a 23cm diameter cake



Ingredients:

8 eggs separated into two

160 g of birch sugar

130g flour

30g finely chopped walnuts

Pinch of cinnamon

Zest of 1 orange





Mix the yolks till white colour foamy. Whip beating the white egg with birch sugar to not too hard foam then mix the two foam loosely and gently mix the flour, the cinnamon and the nuts into. Fill it in the cake-rings and bake it for 40-45 minutes in 160 C preheated oven.




Walnut cream



230 ml milk

Sugar 250 g

30 g maize starch

1 vanilla stick

150 g of finely chopped walnuts (extra for garnish)




300g butter

100g melted white chocolate


Mix the starch in some milk, the rest of the milk goes for boil with the vanilla. When it boiled make it dense with the starch then removed from the heat-plate stir the birch sugar and the walnut in it. When this base material cooled whip it with the butter and mix the white chocolate into it.



Cut the cooled cake into three pieces and fill it with the cream. Decorate as per your taste.
